Description

The sambal, a key element in this recipe, is a tantalizing blend of chili, tomatoes, green onions, onions, and garlic, sautéed to perfection in oil. The addition of terasi (shrimp paste) introduces a depth of savory complexity, while a pinch of sugar and salt balances the spiciness. Ingredients
  • 450-500gr gourami fish (can use any fish)
  • 1 lime
  • 2-3 tbsp chicken bouillon
  • 5 garlic cloves
  • Oil for frying
  • Sambal
  • 3 tbsp oil
  • 5-10 chillies
  • 1/2 lime
  • 2 tomato
  • 1 spring onion
  • 1 tsp terasi (shrimp paste)
  • 2 cloves garlic
  • 1/2 onion
  • a pinch of sugar
  • a pinch of salt
  • 1 tbsp mushroom bouillon
Instructions
  1. Blend garlic until smooth, then transfer it to a container. Squeeze in lemon juice, add mushroom bouillon, and pour in water. Mix well and pour the mixture over the fish. Let it marinate for 10-15 minutes, then fry until crispy.

  2. Cut chili, tomatoes, green onions, onions, and garlic according to your preference.

  3. Heat oil, sauté the chili mixture over high heat to keep the sambal from wilting. Add shrimp paste, seasonings, and lime juice. Stir and taste.
