Chicken Bhuna Masala is a symphony of robust and earthy spices, with notes of smokiness from the perfectly "bhuna"-ed masala, complementing the succulent chicken to create a harmonious blend that is simultaneously rich, aromatic, and irresistibly flavorful.

Ingredients
    Chicken marination:
  • 500 gr chicken (peel the skin and cut according to taste)
  • 1/2 tsp salt
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder
  • For the gravy:
  • 1/2 onion
  • 2 pcs crushed garlic
  • 1 tbsp ginger & garlic paste
  • 1 pcs bay leaf
  • 2 pcs cloves
  • 2 pcs cardamom
  • 1 tsp black peppercorns
  • 3 pcs dried chilies
  • 1 inch cinnamon
  • 1 tsp chicken masala powder (substitute: coriander powder, cumin powder, chili powder, turmeric powder)
  • 1 pureed tomato
  • 1 tbsp plain yogurt
  • 1/3 cup oil
  • 1/3 tsp sugar
  • 1/2 tsp salt
  • 1 tsp mushroom bouillon
  • 1 green chili (to sprinkle on top)
Instructions
  1. Begin by marinating the chicken with salt, turmeric powder, and chili powder. Allow it to sit for at least 10 minutes, letting the flavors seep into the meat.

  2. In a pan, heat oil and add bay leaves, cloves, cardamom, black peppercorns, dried chilies, and crushed onions and garlic. Stir well and cook until the onions are slightly wilted, releasing a tempting aroma.

  3. Add ginger & garlic paste, ensuring the raw smell disappears. Then add the chicken masala powder (or its substitute) and pureed tomatoes. Cook until the tomatoes blend seamlessly with the spices.

  4. Turn off the heat momentarily and add plain yogurt. Mix thoroughly to avoid any curdling. Resume cooking to harmonize the flavors without breaking the yogurt.

  5. Add salt, sugar, and mushroom bouillon. Cook until the oil starts to separate, creating a luscious masala base.

  6. Add the marinated chicken to the pot, ensuring it's well-coated in the aromatic masala. Adjust the water level as needed and cook until the chicken reaches perfection – tender and infused with the rich flavors of the spices.
